Why use a mangal? The mangal is a charcoal barbecue, simple in design, most often rectangular in shape. The main difference from a conventional barbecue is the depth of the metal box, which allows for a gentler ember and cooks meat or vegetables with less intense heat. Food is more flavourful and less dry.

Tip for knowing when the embers are ready: if you hold your hand 15 cm above the embers and can bear the heat, then your embers are ready. If you cannot bear the heat given off, wait a little longer — the embers are too intense and may burn your food.
